This is one of those recipes I've had in my recipe box for ages. This Chocolate Snack Cake is one of my favorite treats to make when I want something easy and from scratch. You don't really need frosting on this cake - just a sprinkle of powdered sugar if you'd like. You can also opt to add chocolate chips - but who doesn't want extra chocolate in their chocolate cake?!

This recipe is so easy that it's one of the first recipes my kiddos learn how to make when they're ready to bake on their own. You'll notice that there are no eggs in this cake - making this cake perfect for those times when you're running low or out of eggs! Yes, that has happened to me a time or three (or too many) ... but who's counting?!

Chocolate Snack Cake

Prep Time: 15 minutes
Cook Time: 40 minutes
Yield: 9 servings

Ingredients
  • 1⅔ cups all-purpose flour
  • 1 cup packed brown sugar OR granulated sugar
  • ¼ cup baking cocoa
  • 1 tsp. baking soda
  • ½ tsp. salt
  • 1 cup water
  • ⅓ cup vegetable oil
  • 1 tsp. distilled white vinegar
  • ½ tsp. vanilla extract
  • ½ cup semisweet chocolate chips (optional)
  • Powdered sugar, if desired

Instructions

1. Preheat oven to 350°F.

2. In an ungreased square baking pan (8x8x2-inches), mix flour, sugar, cocoa, baking soda and salt with a fork. Stir in water, vegetable oil, vinegar and vanilla extract. Sprinkle chocolate chips over the batter, if desired.

3. Bake 35-40 minutes, or until a toothpick inserted near the center tests clean. Cool in pan on a wire rack.

4. Sprinkle with powdered sugar, if desired.
