I have to admit that I have been a huge fan of the baking mix that comes in the yellow box. A huge fan of it - because it was easy. I always thought it was some mix of stuff that was impossible to make at home until I started seeing some of my bloggy friends replicate it and share their posts.

I hate to say that I think the yellow boxed stuff is absurdly expensive once you know what is in it .... and I am a cheap-o! I love knowing that I can make a substitute at home - using common pantry ingredients - for a lot less money!! And, I never have to worry about not having it on hand, because I can just as easily whip up another batch!
