Funfetti Pound Cake

Prep Time: 15 minutes
Cook Time: 1 hour 20 minutes
Yield: 16 servings

For the cake:

  • 1 pkg. (8 oz.) cream cheese softened
  • 1½ cups (3 sticks) unsalted butter, softened
  • 3 cups granulated sugar
  • 6 large eggs, at room temperature
  • 3 cups cake flour
  • 2 tsp. vanilla extract
  • ½ cup sprinkles

For the glaze:

  • 1 cup powdered sugar
  • 2-3 tbsp. Milk
  • ½ tsp. vanilla extract
  • Sprinkles (for garnish), optional
Instructions to make this beautiful cake :
1. Preheat oven to 325°F and give grease and flour in a pan and set aside.
2. After doing step 1, cream the butter and cream cheese until smooth in large bowl. Gradually add some sugar and beat until fluffy.
3. Add the eggs one at the time, beating well after each addition. Add some flour and mix until well combined. Stir in the vanilla. Fold in sprinkles.
4. Pour the batter into prepared pan. Bake for one hour. Test cake with a toothpick inserted near the center to test if it comes out clean – you may need to bake up to an additional 20 minutes, depending on your oven. (Note – keep an eye on the cake and often check if it needs to cook longer).
5. Remove a cake from the oven and let a cake cool in pan for 20-30 minutes.
6. Once cooled, make the glaze by stirring together the powdered sugar, vanilla and 2 tbsp. of the milk. Add more milk if a thinner glaze is desired. Drizzle the glaze over the cooled cake and immediately top with extra sprinkles. Let glaze set before serving.
